I have acquired a hatchling male coral snow corn from SMR and he has been eating small pinks. I would like to know how long should I keep feeding him one small pinky and then feed him two

About 20 grams is when most people move to two pinkies. You should check with a scale but just by eyeballing he's probably about there now.
