Well, it seems I disturbed Absinthe in mid-shed last night and then she decided to spend the night in the cold side of the viv.

Now, last night she'd shed over half her skin, but today the remaining skin seems to be the same amount as last night and as stated, she spend the night in the cold side of the viv so she's not too active.

She's got a rock hide and a branch as well as some water, but can I aid her in any way? Also, how long is a typical shed meant to be, day-wise?

The actual "skin" of the shed should completely come off in one full piece within the time it starts.
The shed period changes as they grow. A young one can take 5-6 days from blue to fully shedding.

Get some warm water, not too warm that you so much "enjoy" it and let her soak for 5-10 minutes. After, let her crawl through a damp washcloth and leave her alone in her home. She should finish today, check around noon.

Pop a wet flannel in her feeding tub, add snake and leave in the 'snake-o-bath' for an hour and you should find something like this.........

I'll keep you all updated. I take it the flannel will but luke warm to make sure she's not in discomfort? Shall I put the lib on her feeding tub as well?

Pretty much lay the towel/washcloth in a container and get it soaked with warm water so that there is still some water standing. Yes put the lid on.
 
If you have no way of measuring the water temperature, I recommend making the water room temp rather than lukewarm. "Lukewarm" to us could still be "uncomfortably hot" to them.

I put the plastic tub containing the damp towel, into their home tank at the cool end for a couple of hours. That hopefully brings it to a temp that they're accustomed to. During that time I also cover any airholes in the tank with clingfilm, to really bring up the humidity and create a kind of mini sauna. I uncover some of them when the snake goes in.
