Biting is a sign of stress.
Death rolling- when the snake spins wildly.
Tail-rattling.
Musking.
Pooping, though that can also just be from the exercise of being handled.
Not feeding.

Also, when you get used to how he normally feels when picked up, you'll be able to tell from changes in muscle tone. If he tenses up more than normal, or if he seems "flabby" or too relaxed, those might indicate stress.

I reckon tail-rattling is the classic immediate sign, and not eating is the classic medium/long-term sign.
 
regurging! Aka barfing. But that can be caused by other things as well, so examine everything if they start doing that.
 
Death roll doesn't mean the snake is dying, it comes from an alligator/croc behaviour where the animal grabs its prey and spins like a log around and around very fast. If you put an iguana on a leash, it may display this behaviour! A snake that desperately wants to escape you might do this.
